If you want to see how your Gradescope assignment will appear to students you can set up a test student account. Go into your Gradescope course and then to the Roster area. Click Add Students or Staff. Choose Single User. Enter the test user details on the Add User screen. You could call the user something like Test User –

Students are able to submit Regrade requests by default for all published assignments, and this cannot be disabled at the system level, so you will have to apply the settings for each assignment. To disable regrade requests, go to the assignment you need to edit, click on Regrade Requests from the left sidebar then click Regrade Request Settings.

This setting is used mostly for exams to be sure that students will not be able to view their marked papers. This is not absolutely essential: as long as you never Publish grades in Gradescope, students will not be able to see how their work has been marked.
